ε-Polylysin is a homo-polypetide of approximately 25~30 L-Lysine residues produced by streptomycs albulus.
It can inhibit the growth of Gram-positives and Gram-negative bacteria,yeasts,moulds,virus ect.
It can especially inhibit the Gram-negative bacteria,such as E.coil,salmomella,which is not easily inhibited by other bio-preservatives.
It can also inhibit the thermpohilics,such as B..stearothermophilus.It is widely used as safe food bio-preservative.
